Boubalé tells the story of a love affair with cooking that goes back to the dawn of time.

Travelling from the farthest reaches of the Levant to the Marais district of Paris, Boubalé has not lost the essence of this journey: the taste for sharing.

At the crossroads of Eastern Europe and the Middle East, Boubalé is an invitation to come together around tables laid generously. More than a restaurant, it's a place dedicated to the pleasure of being together.

Boubalé is the affectionate name for ‘my little doll, my little darling’ in Yiddish, which is what the two co-founders of Maisons Pariente were called as children by their grandmothers.

Boubalé tells a story of diversity and tradition between Europe and the Middle East. The sun-drenched flavours of the Mediterranean meet the spices and traditional recipes of the Levant, Turkey to be precise, where each dish symbolises the union of two continents and their delicious gastronomy. Cumin, mint, paprika, parsley and sumac combine and mingle joyfully, creating a mosaic of colourful flavours.

With them, everything becomes a game of balance and flavour, and with Boubalé, all these memories come to life again.

Boubalé pays tribute to childhood memories and family traditions, faithfully perpetuated over the centuries.

We wanted to bring an extra touch of refined creativity and gourmandise to a cuisine that comes from the depths of the soul. Drawing on two distinct worlds, Boubalé becomes the Ariane’s thread of an initiatory journey to the farthest reaches of the Levant. As we discover history, we also immerse ourselves in the culinary traditions of these worlds, executed by the sheer force of memory and talent. The menu features mezzés, the tasty jewels of Turkey, mixed with influences from all over the Mediterranean. These influences are combined with a shared love of spices, flavours and sunshine to create a joyful table for sharing. Boubalé reinvents Mediterranean cuisine in colors, as no one has ever seen it before. Irresistible!

You enter Boubalé through the back door of a dream. The dream of an almost forgotten world, of a confidential art of living with a rare authenticity that feels good. An art of entertaining that considers you a friend before you even know you.

Like the Bosphorus, Boubalé gracefully blends Eastern Europe and the Middle East in a flamboyant universe that honours Byzantium with its vibrant colours and traditional architecture. The hand-engraved crystal glasses sparkle in the light, the opulent velvet dances with the ceiling frescoes, and the delicate, custom-designed porcelain waltzes with the silverware, combining baroque and fantasy to offer a moving elegance where time ceases to exist. What remains is the pleasure of opening up to others, of sharing the grace of the moment, the timeless sense of celebration.

A few notes of music are enough to stir the heart, and as has always been the case since the dawn of time, any dinner worthy of the name ends with dancing around the tables.
