Boubalé tells the story of a love affair with cooking that goes back to the dawn of time.

It’s a story that began on the edge of the Levant, traveled to Jerusalem and then stopped off in Paris, in the Marais district. The concept of Boubalé revolves around the idea of generosity and warmth.

Boubalé is the new beating heart of the Marais district, where joie de vivre and the joy of sharing real emotions are the order of the day. More than a restaurant, it's a place dedicated to the pleasure of being together.

The name ‘Boubalé’ is a Yiddish term of endearment used by Ashkenazi grandmothers to express affection towards their loved ones. Ancestral Slavic gastronomy meets the sunny flavors of the Levant, offering a unique cuisine where grandmothers’ family recipes are enhanced by Levantine audacity. Every bite is an invitation to travel, where cultures meet and enrich each other, creating a perfect harmony between tradition and modernity.

In this fusion of flavors, cooking comes alive, and differences are transformed into a source of real wealth. Boubalé is all this memory coming back to life and writing a new chapter in its odyssey.

From Poland, Russia, Germany, Georgia, Lithuania, and Ukraine, Ashkenazi grandmothers made their journey to Israel. Upon arrival, they shared their recipes with neighbors from Morocco, Syria, Lebanon, Iraq, and beyond.

Boubalé pays tribute to childhood memories and family traditions, faithfully perpetuated over the centuries.

We wanted to bring an extra touch of refined creativity and gourmandise to a cuisine that comes from the depths of the soul. So Boubalé dares the improbable: to give a contemporary sensuality to specialities reputed to be austere, by the sheer force of memory and talent. The menu dares to honor the mythical dishes of Levantine cuisine, so modestly known. Revisited with inspiration from Slavic countries, we find a common love of sharing. Boubalé rises to the challenge of finally restoring these dishes to their former glory. A gastronomic journey into an unknown land, which transports you with the joy and exhilaration of first times. Boubalé reinvents Levantine cuisine in colors, as no one has ever seen it before. Irresistible!

You enter Boubalé through the back door of a dream. The dream of an almost forgotten world, of a confidential art of living with a rare authenticity that feels good. An art of entertaining that considers you a friend before you even know you.

Like the Bosphorus, Boubalé gracefully blends Europe and Asia in a flamboyant universe that celebrates Byzantium, its dazzling architecture and vibrant colors. Spices from near and far come together, offering a journey between the Levant and Slavic countries, for unique flavors. The engraved crystal of the glasses ignites sparks in the eyes, the opulent velvet dances with the frescoes on the ceilings, the delicate porcelain waltzes with nostalgic silverware. Baroque and fantasy mingle, and the intimate décor exalts a moving elegance. Time no longer exists. What remains is the pleasure of opening up to others, sharing the grace of the moment, the timeless sense of celebration.

A few notes of music are enough to stir the heart, and as has always been the case since the dawn of time, any dinner worthy of the name ends with dancing around the tables.
